Gluten Sensitivity… what is the big deal?

These days every body is talking about gluten sensitivity. We hear people being advised to get off gluten or reports how people recovered from a large variety of problems by eliminating gluten from their diet.

What exactly is gluten? Gluten (from Latin gluten, “glue“) is a protein composite found in foods processed from wheat and related grain species, including barley and rye. Gluten gives elasticity to dough, helping it rise and keep its shape and often gives the final product a chewy texture. We find gluten in all breads, cakes. cookies, pasta, beer and other foods that are made from these grains, the majority being made from wheat.

Why is everybody gluten sensitive all of a sudden?

Celiac disease, which is a condition where the body is missing the enzyme that is required to break down gluten is a rather rare condition, traditionally affecting a very small segment of the population.

So does every body have Celiac disease now? No! The new gluten sensitivity is due to the fact that amore than 90% of wheat in the United States is GMO…a genetically modified organism. This is why everybody has an adverse reaction to wheat, even if some people seem to have no symptoms or fail to make a connection between their symptoms and their consumption of gluten (and corn).

Our DNA communicates with everything we consume. Everything in nature has a DNA code that our DNA recognizes when we consume it. GMO foods do not have a DNA code that our DNA can recognize. Our nervous system therefore treats GMO foods like a foreign invader and creates an inflammatory reaction. This inflammatory reaction is the root cause of the sensitivity.

Even if you take a gluten sensitivity test and the test comes back negative, you are still sensitive because although you do not have a genetic predisposition to gluten intolerance, you have a body that is not designed to eat GMO’s.

Removing wheat  and other GMO’s from our diet, especially the diet of our children is one of the best investments we can make into keeping ourselves and our loved ones in good health….. in the short and long term.

GMO gluten sensitivity or intolerance can cause:

The thing we have to educate ourselves about is that many processed foods contain hidden gluten. Read labels and try to eat foods that you prepare at home. Everything from salad dressings to many ready to eat frozen entrees contain hidden gluten. There are many web sites that list commercial brands to watch out for. Take some time and do your research! Most of us grew up being told that whole grains are the foundation of a good diet. Nothing could be further from the truth! In the United States the most commonly consumed grains, wheat and corn, are almost 100% genetically modified. Other GMO’s are black beans, soy beans, canola oil and new crops are being added to the GMO list slowly but surely. Educate yourself!

Take this challenge: remove gluten and corn from your diet for 30 days and then go back to eating it. If you see no difference in the way you feel, go back to your old diet but chances are very, very high that you will feel a great difference in the quality of your life. Try it, you have nothing to loose but good health and vitality to gain.
